Sunday Salmon is a Castle Rock, Colorado-based 501(c)(3) nonprofit dedicated to fighting food insecurity, reducing social isolation, and restoring dignity through nourishing meals and meaningful human connection. We believe everyone deserves access to healthy, high-quality food, regardless of their income, age, circumstances, or ability to pay.

In Castle Rock, an estimated 7,000 neighbors face food insecurity, including approximately 3,000 residents living below the poverty line. In a community often recognized for its prosperity, hardship can be difficult to see. Behind closed doors are seniors choosing between groceries and medications, families struggling to make ends meet, individuals living with disabilities, veterans, single parents, and neighbors experiencing homelessness, medical challenges, or unexpected financial crises. Sunday Salmon exists to ensure these individuals are seen, valued, nourished, and welcomed.

We serve people from all walks of life, with a special focus on those facing financial hardship, transportation barriers, food insecurity, dietary restrictions, and social isolation. More than half of our community diners are seniors, many of whom live alone or on fixed incomes. We also serve children and families, adults with intellectual and developmental disabilities, veterans, individuals with medical vulnerabilities, and anyone who could benefit from a nutritious meal and a caring community.

What makes Sunday Salmon different is our commitment to the quality of the food we serve. Every meal is prepared with organic, gluten-free, seed-oil-free ingredients, with allergen-conscious accommodations, including dairy-free and plant-based options. We believe food assistance should never require someone to sacrifice their health, compromise their dietary needs, or settle for less than they deserve.

We meet our neighbors where they are through five core community programs:

• Sunday Community Dinners: Free, restaurant-quality meals served every Sunday in a welcoming, family-style setting where neighbors gather around shared tables, build friendships, and experience a sense of belonging.

• Wednesday Wheels Meal Delivery: Freshly prepared meals delivered weekly to food-insecure seniors, adults with disabilities, medically vulnerable individuals, and neighbors who cannot easily access food because of transportation, mobility, or financial barriers.

• School Lunch Partnerships: Nutritious, organic, gluten-free, seed-oil-free lunches prepared for students at participating local schools, helping families access healthier food options throughout the academic year.

• Senior Community Dining: Free, chef-prepared meals brought directly to senior living communities, creating opportunities for nourishment, fellowship, and connection among residents who may otherwise experience isolation.

• Mobile Food Trailer Outreach: Bringing free, freshly prepared meals into neighborhoods and community gathering places throughout Douglas County, reaching individuals and families who might never walk through our restaurant doors.​

Since opening in January 2025, Sunday Salmon has grown from a single weekly community dinner into a multifaceted food access organization. We served nearly 20,000 meals in our first year and are on pace to serve approximately 40,000 meals in 2026. This growth reflects both the extraordinary generosity of our donors and volunteers and the increasing need among our neighbors.

But our impact is measured in more than meals. It is found in the senior who no longer eats dinner alone, the parent who can redirect grocery money toward rent, the child who receives a nourishing school lunch, and the homebound neighbor who knows someone will arrive each week with food and a friendly face.

At Sunday Salmon, we do more than feed people. We build relationships, strengthen our community, and remind every neighbor that they matter. Our mission is rooted in the simple but powerful call to love our neighbors, feed those in need, and set the table for those who cannot repay.
